A place you can feel—even with your eyes closed, you know you’re there

There is an area called "Hishio no Sato," where the aroma of delicious soy sauce and the faint scent of fermentation fills the air. The area is lined with soy sauce warehouses and tsukudani factories that have been here since the Edo period, and is always filled with the aroma of soy sauce, so much so that even with your eyes closed, you know you are in Hishio-no-Sato. Not only the aroma, but also the appearance of the soy sauce warehouses is distinctive, with blackened walls, window frames, and even roof tiles made of baked wooden panels. Soy sauce is prepared in traditional wooden vats, and because the type and balance of microorganisms differs from brewery to brewery, each brewery produces soy sauce with a different flavor and rich individuality.
