Shodoshima has been producing somen since ancient times, and is one of the three major production centers of somen in Japan. Nama Somen" is a rare delicacy in Shodoshima, the island of Somen. Nama Somen is a type of somen that is not dried, but is instead stretched long and thin, dried, and then cut to length. Nama Somen is eaten in the same way as dried noodles, but the texture is chewy and elastic, with a rich wheat flavor that is different from that of dried noodles. If you come to the island of somen, be sure to find a place where you can enjoy fresh somen.
